This past weekend, we featured a chicken liver pate vol au vent, again highlighting charcuterie, while Michigan produce is a bit more sparse. The pate was piped into a feuilletage, drizzled with Calabrian chili honey, and topped with Amaro Nonino compressed apples. Just last year (2025), our team was able to share more than 200 new dishes with our community through our seasonally changing menu and specials each weekend.” Bar Pigalle continues this approach, highlighting classic techniques and thoughtful presentations that feel especially fitting when local produce is more limited.
